Sunday Brunch

As instructed by the Commodores, Sunday mornings should be easy. Stress free and wrapped in fluffy dressing downs. This is my recipe for the PERFECT lazy morning.
Step one: Papers and cups of tea in bed until you feel suitably ready to emerge.
Step two: Twist legs out of sheets, tuck toes into slippers and slide into kitchen.
Step 3: Remove the following from cupboards and fridge:
  • Free Range Eggs
  • Crusty Bread
  • Bacon
  • Avocado
  • Humous, butter or mayonnaise (whatever takes your fancy)
  • Tabasco sauce
  • S & P
  • Olive oil
Put a saucepan of water onto boil and once bubbling away spin the water vigorously until it whirlpools inside the pan. Drop in eggs, I break into a glass first then tip in gently and leave for 3 minutes for a runny yolk. Whilst boiling add a slug of oil to a hot frying pan, lay in the bacon and sizzle away until brown and crispy (for really sweet sticky bacon brush with maple syrup before frying). When the eggs 3 minutes are up use a slotted spoon to remove and drop into a bowl of cold water to stop the yolk from cooking through. Remove the crispy bacon and drain on kitchen towel.
Turn on the grill, rip bread into bite-able slabs, drizzle with a touch of olive oil and sprinkle in salt and pepper and pop under the grill. Slice avocado.
Remove hot, crust bread and lather with lashings of butter, mayo, or my favourite- humous!

Layer on the avocado, bacon and top with poached egg and a splash of Tabasco.
Serve with tea, coffee or juice, newspapers and trashy telly.
